What is spelt you ask? Spelt is a species of wheat used primarily in bronze age to medieval times that is enjoying renewed popularity in the health food community. Why you ask? Because many people with wheat allergies are able to tolerate spelt, and it offers a wider range of nutrients compared to its cousins in the wheat family. Because of its high levels of niacin, manganese, thiamin and copper spelt is especially good for those who suffer from migranes or diabetes or most important atherosclerosis (ie: the build up of cholesterol and fat on your artery walls). 

Really the list of health benefits is too long to mention but also includes: positive effect on gallstones, lowered risk of diabetes, improved cardio vascular health and lowered risk of heart failure.
